Can I install a double wall flex pipe to a free-standing wood pellet stove that is vented up through the ceiling?

No, flexible pipe is only suitable for solid-fuel appliances (such as a wood or pellet stove) when the entire unit is enclosed in a masonry fireplace with chimney. Moreover, that flexible pipe must be stainless steel. This Metal-Fab flex pipe is an aluminum, type B gas vent pipe and certainly not suitable for use with a pellet appliance regardless.
