Would this unit fit in a soapstone wood burning stove?

Gas logs are designed for installation in a wood-burning fireplace (per this manual). If you installed in a wood stove, I believe you would have issues with sooting, and CO spillage. Installation would also be very challenging.

No sorry, it would not be. as the logs and burner are made to match one another. Use on another (not UL tested together) could cause a fire or sooting.

Are these Real Fyre White Birch vented gas logs prone to showing dirt and grime more easily?

As the white birch log sets are white in color, they are more prone to showing char marks, which can be removed using Scrubbing Bubbles.
