How can this be wired to a cidv-30 -7 stove?

The low-voltage thermostat wire would attach to the gas valve on the unit. The are 3 screws/spade connectors on the valve. You would attach the thermostat wire to the TH and TP/TH spade connectors on the valve and run them back to your thermostat. You can see an
archived online manual here for further reference.

I currently have a log set with a manual millivolt switch. I'm getting the Ponderosa ventless set and wanted to get a thermostat. Is this wired or wireless? Do I need to use the millivolt wall switch with it that I currently have?

The Ponderosa ventless gas log set can be ordered with a millivolt burner, which will allow you to use the millivolt wall switch you currently have or you could use a millivolt wall thermostat or a thermostat remote control.

The front cover came off of my Empire thermostat, the spring came out and the thermostat is no longer working. Could that be repaired or is the thermostat going to need to be replaced?

If it's not working, it is likely that the mercury switch or some part of the mechanics has come apart and would be considerably difficult to fix. I would probably go with replacing it.

Does it also provide a simple on/off function so the fireplace won't light when the temperature in the room drops below the set temperature?

This would indeed work with the DVCD42FP70P-3. You essentially run two low voltage wires from the thermostat to the wires where your on/off switch clips behind your lower access panel. It will allow you to have the unit come on and off to keep the room at a set temperature, as well as having a specific "off" setting.

This product is indeed very much the same as a standard analog wall thermostat. The primary difference is that it is calibrated to work with millivoltage, rather than 24 volts that are common to an HVAC thermostat.
