On the Empire Model SR18TW, am I able to turn the unit off completely at night or while I'm away so that it doesn't cycle. I'm assuming that if I leave it at the lowest setting (1), it will turn on if the temperature lowers to a certain temperature? I would like to be able to manually control it at night or when I'm away for a good part of the day or days at a time.

Yes, you can turn the knob to the "Pilot" setting to keep the heater from cycling. This will keep the pilot light so it won't need to be re-lit while ensuring the heater does not turn on.
