What is the purpose of this switch?

This particular switch simply turns a gas burner on and off by being wired to a millivolt gas valve. For it to work, a standing pilot light must be lit.

Is this a millivolt switch or a standard 110v switch?

This is a millivolt switch. It is used to open and close the circuit to turn the unit on, and will not send any actual voltage to the valve.
